During the busy months of spring, meal prep and meal planning can be very helpful. Finding some family favorite meals and using a meal planner help to make busy afternoons much smoother.

What's In Season in April?
Generally, April brings the beginning of spring seasonal fruits and vegetables! I start craving lighter food like entree salads!
The farmer's market is starting to open and I find myself there sometimes even more than the grocery store. Suddenly, grocery shopping will include a lot more freshness!
There are still some chilly days in April, which are perfect for hearty soups and healthy comfort foods.
I still use my slow cooker, even in the spring and summer. Pineapple pulled pork is a year-round recipe for us.
Hot April days can resemble summer! In that case, this list of light and healthy summer meals will come in handy.
Produce in-season During April Includes:
- Vegetables such as artichokes, asparagus, beets, broccoli, cabbage, green onions, mushrooms, peas, radishes, and rhubarb; greens like kale, spinach, and lettuce; root vegetables like carrots, beets, and turnips.
- Fresh fruit such as avocados, pineapple, and strawberries in some regions as well as citrus fruit such as oranges, lemons, and grapefruit.
- Herbs such as chives, cilantro, dill, mint, parsley, and thyme.

April Meal Plan Tips
- A little bit of effort is better than nothing! The spring is super busy, so aiming for three healthy meals made at home each week is my goal.
- Move recipes around or pick just a few favorites, whatever works best for you (ground beef tacos are one of our favorites)!
- Plan for holidays like Easter (check out these Easter brunch recipes) - who doesn't love holiday leftovers for an easy meal?
- As with previous months, each calendar day has one main dish. Add any of our side dishes (brown rice, green beans, and sweet potatoes are regular sides for us!) to complete your meal.
- If you have some extra time, meal prep one meal you can eat throughout the month. Air fryer chicken nuggets are an easy freezer meal to make ahead.
- Use ingredients that work for your whole family. Skip meals they won't like.
- One day per week is for leftovers or eating out.
- Family favorites will be from previous meal plans along with new recipes to try.
- Review all of the recipe instructions and ingredient lists when creating your April meal plan.
