I've generally baked using one-to-one gluten free baking flours from both Bob's Red Mill and King Arthur. Although very close to a traditional all purpose flour, there are still some recipes that do not work as well when using these flours.
Adding too much flour can definitely be the cause of why the recipe seems dry and crumbly. Err on the side of less flour according to recipe directions (if it gives a range) and don't be afraid to add flour in parts to ensure the best texture.
Look for recipes that incorporate xanthan gum into the flour. This will help with elasticity and make the dough a better texture, less gritty and overall better.
