Ingredients and Substitutions

Turkey Smash Burgers Ingredients

- Ground Turkey: Use at least 93/7 turkey meat. Higher-fat ground turkey (or ground beef!) makes the best burgers. Super lean ground turkey is not recommended.
- Worcestershire Sauce: Adds delicious savory flavor and moisture. Soy sauce may be substituted.
- Mustard: Coarse stone ground mustard works very well in this recipe. I recommend Grey Poupon.
- Burger Seasoning: Use a store-bought burger seasoning or a mix that includes garlic powder, kosher salt, paprika, chili powder, onion powder, and black pepper.
Low-Carb Burger Sauce Ingredients

- Ketchup: For low carb burger sauce, use an unsweetened ketchup like Primal Kitchen.
- Mayonnaise: Both traditional mayonnaise and avocado mayo work well.
- Dill Relish: Use jarred dill relish or chopped dill pickles.
- Black Pepper: Season to taste with black pepper. You do not need to add salt.
- White Vinegar: Use white vinegar or a splash of pickle juice to add flavor and help to combine the burger sauce.
How to Make This Smash Burgers Recipe

Step 1 - Combine the Turkey Ingredients

Heat a Blackstone griddle or flat top to medium-high heat. Combine the a pound of ground turkey, mustard, and spices in a large mixing bowl.
Step 2 - Form into Equal-Sized Balls

Form the turkey mixture into eight equal portions. They should resemble large meatballs.
Step 3 - Place on the Hot Griddle

Drizzle avocado oil or place a tab of butter on top of the hot griddle. Once melted, place the turkey burger balls on the hot surface.
Step 4 - Smash into Patties

Place a piece of parchment paper over top of the turkey balls. Use a burger press to press the turkey burger patties down into thin patties.
Step 5 - Flip

Use a large spatula to flip each burger.
Step 6 - Add Cheese

Place a slice of cheese on the second side (cooked side) of each turkey patty.
Step 7 - Dome

Place a dome over the top of the burgers with cheese to melt the cheese. Allow the burgers to cook for 1-2 minutes more, then move to a plate.
Stovetop Directions
To make smashed turkey burgers on the stovetop, heat a cast iron skillet over medium-high heat.

Place the turkey balls onto the hot pan. Cook for 2-3 minutes on the first side.
Flip, place the cheese on top, and use a burger dome to melt the cheese while the burger finishes cooking.

Step 1 - Combine the Ingredients

Combine all of the low carb burger sauce ingredients in a food processor or high-speed blender. Blend until smooth.
Step 2 - Top the Burger

Top burgers with the smash sauce. Store the low carb burger sauce in an airtight container for up to 1 week.
Tips For Making the Best Turkey Smash Burger Recipe
- Toast the hamburger buns: Once the griddle is turned off, place buttered buns on the warm griddle for 1-2 minutes or until they are toasted.
- Cook time varies: The total time to cook turkey burgers varies depending on your type of cooking device. Flat top griddles tend to get hotter than an indoor griddle or stovetop.
Make Ahead
Make the turkey mixture and form round meat balls up to 2 days in advance.
Storage for Leftovers
Store leftover turkey burgers in an airtight container in the refrigerator for up to 3 days.
Freezing
Prepare the turkey balls and freeze them in a freezer-safe container for up to 3 months. Defrost before cooking.
Reheating

I do not recommend reheating in the microwave.

Ground turkey should be cooked to an internal temperature of 165°F. Use a meat thermometer to ensure doneness.
Brioche buns, potato buns, and pretzel buns are the top 3 bun types for making burgers.
Ground chicken breast can be too dry for smash burgers. I prefer to make air fryer chicken burgers when using ground chicken.
Swiss cheese and cheddar cheese are my two top favorite cheese options for turkey burgers. American cheese, pepper jack cheese, or even crumbled feta cheese are all great choices.
Avoid overcooking, do not over mix the meat when preparing the meat balls, user a higher fat content burger, and allow the burgers to rest before serving to create moist and juicy burgers.

Blackstone Grill Instructions
- Preheat the Blackstone griddle over medium-high heat.
- In a large bowl, combine the ground turkey, Worcestershire sauce, Dijon mustard, and burger seasoning.1 pound ground turkey, 2 teaspoon Worcestershire sauce, 1 tablespoon Dijon mustard, 2 teaspoon burger seasoning
- Scoop the meat out of the bowl in eight equal-sized portions, creating 8 large balls. Place the burger balls on a sheet pan.
- Melt 1 tablespoon butter or avocado oil on the hot griddle.1 tablespoon butter
- Place each burger ball onto the hot griddle. Place a piece of parchment paper onto the ball and press down using a burger press.
- Allow each side to cook for 1-2 minutes. If using cheese, place a slice of cheese over the top of the cooked side after flipping. Dome with a burger dome to melt the cheese. Season to taste with salt and black pepper.salt and pepper
