Healthier Little Bites Recipe Party Cake Mini Muffins
Make this healthy little bites recipe for party cake muffins for a quick breakfast or easy snack! These mini muffins are light and fluffy and made with real ingredients!
Spray a mini muffin tin with coconut oil spray and set aside. Add the dry ingredients (except the sprinkles) to a large bowl.
2 cups flour, ¾ teaspoon baking soda, ½ teaspoon salt
In a separate large bowl, add the eggs and whisk until beaten. Add the remaining wet ingredients to the bowl and mix until incorporated.
⅔ cup white sugar, ¼ cup refined coconut oil, 2 large eggs, 1 cup nonfat Greek yogurt, ¼ cup milk, 2 teaspoon almond extract
Pour the wet mixture into the dry ingredients and stir until incorporated. Fold in the sprinkles.

Use a small cookie scoop to scoop out about 45 muffins. Bake at 350 F for about 15 minutes or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
