This healthy nectarine cobbler is sweet and delicious! It is the perfect easy summer dessert recipe you can make for summer parties. Gluten-free and vegan!
Preheat the oven to 325F. Grease a 10-inch pie pan with ½ tablespoon coconut oil.
Clean the 2 cups nectarines and carefully dice them into ½-inch pieces. Set aside.
In a large bowl, whisk together 1 cup oat flour, 2 teaspoon baking powder, ¼ teaspoon salt, and ¾ cup coconut sugar.
Carefully pour 1 teaspoon vanilla and ¾ cup almond milk and stir until just combined.
Pour the batter into the prepared pie dish. Place the nectarines on top of the batter. Do not stir them in.
Bake for 1 hour. Allow the nectarine cobbler to cool for about 30 minutes before serving.
