These healthy no-bake pumpkin protein bars are a healthy snack that tastes just like a pumpkin perfect bar! These homemade protein bars are the perfect after school or post workout snack! Only 6 simple ingredients and 10 grams of protein per serving.
Add all ingredients to a large bowl. Use a wooden spoon to mix until incorporated. The mixture will be thick.
½ cup vanilla protein powder, 1 teaspoon pumpkin pie spice, ½ cup oat flour, ⅓ cup canned pumpkin puree, ¼ cup maple syrup, ½ cup almond butter
Press the pumpkin protein bar mixture into a bread pan lined with parchment paper. Flatten the top and freeze for 30 minutes.
Remove the one large bar from the loaf pan. Cut into 8 equal-sized bars.
Notes
Do not skip the freeze! It will make cutting the bars much easier.Store bars in the refrigerator in an airtight container. Do not store at room temperature as they will soften quickly.To make the recipe high-protein, use a higher protein per gram protein powder or use all protein powder in place of oat flour.Do not substitute ingredients for the best results.
